The harvest is harvested manually, in boxes, at its optimum point of maturation. After a long maceration, it is fully aged in clay, for a period of more than 12 months.
during this aging period, we will apply the “batonnage” system for at least 4 months.
It is removed by decantation and bottled with a manual system.

Intense red color with purple notes. On the nose it is rich and complex in aromas, with varietal notes of ripe fruit, liquorice, spices, leather and subtle mineral notes.
On the palate it is fresh, sweet, structured and very persistent. Mild sensations caused by amphora and ripe tannins
It is a clear example of craftsmanship and tradition, where the jar allows it to evolve without external aromatic contributions.
