Description
It is the most traditional liqueur wine. Semi-fermented wine with a sweet taste and wood color, made with macerated must and vinous alcohol. The variety we use is the White Grenache. The grape has a probable minimum alcoholic strength by volume of 15% vol. In its preparation, the flower must is separated from the grape and macerated by adding wine alcohol. Then it is stirred daily several times, for a few days, to aerate it and leave the yeasts inactive. Once the maceration is finished, the solids are separated with a press and alcohol is added until reaching a volumetric alcoholic degree between 15% vol and 16% vol. La Mistela Mercè del Menescal, has a minimum aging of two years, one of which is made in an oak wood container
